Autumn really does Taste Great! This jar of deliciousness is our hero! Raising money with every jar for Velindre Cancer Centre in Cardiff and has now won it's 2nd Great Taste Award. Inspired by my lack of tastebuds during chemo, this zingy blackcurrant jam is perfect for your toast and delicious over vanilla ice cream. Autumn's fruitful abundance is in full swing so get your pans out and make your own jars of deliciousness - a confirmed positive distraction from the chaos around us.
If you have apples galore, maybe some quince or can reach over into your neighbour's garden (we won't tell) try this Membrillo recipe - a Spanish style fruit paste, delicious with local award winning Angiddy Cheese, blue cheese and add a spoonful to roast pork gravy too.
- 1.2 kg apples, quince or mixed. Cookers and eaters good.
- 730 ml water
- 1/2 lemon - juice, zest and rind - chop in half and pop in the pan.
- Bring to the boil
- Return to the pan and add 740g sugar to 1kg fruit.
Chop the whole apples & quince including the core and seeds. Windfalls are great for tis, cut off any bruised bits. You can even chop them and freeze them until you have enough for a big batch.
Cook the fruit and water until soft, leave to cool and put through mouli - fruit pulp. .
Return to the pan and add 740g sugar to every kg of fruit and cook low and very slow until dark and unctuous.
Add a drop to a chilled saucer and it should remain in a solid shape.
Fill sterilised jars and store in a dark cupboard or put into plastic tubs and keep in the fridge.
It will last and last and tastes incredible.
In Spain, they love a really solid block that's sliceable, I like that too but fruit varies so if it's slightly softer, don't worry - always go with flavour rather than overboiling.
