Apricot Frangipane Tart from The Hardwick

Stephen Terry is one of our favourite people, Chef Patron of The Hardwick in Abergvenny with his wife Jo, you can often find him on TV with the lovely James Martin and a damn fine chap too!

Stephen kindly shared his recipe for Apricot Frangipane Tart with our Apricot, Almond & Amaretto Jam.

Mix the butter, sugar, almonds and flour to a smooth batter, poach the apicots with vanilla, cool. Blind bake a pastry case, add the Apricot, Almond & Amaretto Preserve, layer the poached apricots, cover with frangipane and bake.
